POTATO OMELET 
1 sm. potato, pared and cubed
1 tbsp. vegetable oil
1/4 c. substitute eggs
1 tbsp. chopped onion
Pepper
Chopped onion

Heat oil, then add cubed potato. Fry until browned and tender. Add substitute eggs (pour on top). Cook over low heat until eggs are set. Turn gently and cook until done.
