SHELIA'S SOUTHERN BISCUITS 
3 cups all-purpose flour
2 tbsp. sugar
2 1/2 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. salt
1/2 cup vegetable shortening
1 1/4 cups milk
1/2 cup (1 stick) melted unsalted butter, divided

Preheat oven to 450°F.

In a medium bowl combine flour, sugar, baking powder, baking soda and salt. Cut in shortening, add milk, a little at a time, stirring constantly until well mixed.

Turn dough out on lightly floured surface, knead lightly 2-3 times. Roll with floured pin to 1/2-inch thickness, cut with 2-inch biscuit cutter (I use a small OJ glass).

Place in greased cast-iron skillet (it is oven safe), brush with one half of melted butter.

Bake at 450°F for 12 to 15 minutes until golden brown. Brush with remaining melted butter and enjoy!
