LITE BROCCOLI QUICHE 
Cooking spray
1 tsp. canola or olive oil
1/4 cup chopped onions
1 (10 oz pkg) chopped broccoli
1/2 cup chopped red pepper
2 cups egg substitute. 1/2 cup small-curd low-fat cottage cheese. 1/2 cup shredded low-fat swiss cheese. black pepper to taste. Garlic powder to taste.

Preheat oven to 400°F.

In a small pan, over medium-high heat, add oil and onions. Add broccoli and red pepper. Spray a 9-inch pan with cooking spray.

Spoon cooked ingredients into pan. In a medium bowl, mix remaining ingredients until well combined. Pour over veggies in pan.

Bake for 40-50 minute or until a light golden brown and cheese is melted.

CALORIE; 100 per slice. FAT; 30 grams. SAT FAT; 1 gram. CHOL; 5 grams.
