J. B.'S FAVORITE MICROWAVE
ZUCCHINI
 
4 c. sliced zucchini
3/4 c. grated or shredded carrots
1/2 c. chopped onion
4 tbsp. butter
1 1/2 c. seasoned stuffing mix
1 (10 oz.) can cream of chicken soup
2 c. sour cream
1 sm. can onion rings

In a 2 quart casserole, cover and cook on High: zucchini, carrots, onion and butter for 10 minutes, stirring twice. Mix in soup and sour cream and top with onion rings. Microwave, uncovered on High for 12 minutes. Enjoy.

Since microwave ovens vary in power, you may need to adjust your cooking time.
