PINEAPPLE SOUR CREAM PIE | |
1 c. sugar 1/4 c. flour Dash of salt 1 can undrained crushed pineapple 1 c. dairy sour cream 1 tbsp. lemon juice 2 slightly beaten egg yolks 1 baked 9" pie shell 2 egg whites 1/2 tsp. vanilla 1/4 tsp. cream of tartar 1/4 c. sugar In saucepan, combine sugar, flour and salt. Stir in pineapple, sour cream and lemon juice. Cook and stir until mixture thickens and comes to a boil; cook 2 minutes. Stir small amount of hot mixture into egg yolks, return to hot mixture, stirring constantly until thick. Pour into baked pie shell. For meringue: Beat egg whites until soft peaks form. Add vanilla, cream of tartar and sugar, blending well. Top pie with meringue and bake in 350 degree oven for 12 minutes or until meringue is browned. |
