DAN'S MANGO SALSA CHICKEN 
Prepare the salsa a couple of hours in advance before grilling.

4 boneless skinless chicken breasts

BIG D'S SEASONING:

2 tbsp. onion powder
2 tbsp. garlic powder
1/4 cup paprika
freshly cracked pepper or ground pepper, to taste
1/3 cup seasoning salt (Lawry's)

Prepare "Big D's" seasoning and season chicken breasts on all sides.

Grill indoors or out till chicken cooked through. Slice chicken into 1/4 to 1/2-inch slices. Fan out onto plate. Top with fresh salsa mixture (see below).

Serve with a side of long grain white rice or rice pilaf.

SALSA MIXTURE:

1 medium red onion
1 green bell pepper
1 red bell pepper
1 ripened mango
1 tbsp. chopped garlic
1/4 cup extra virgin olive oil (EVOO)
salt and pepper, to taste
1/4 cup chopped cilantro
juice of 1 lime

Dice up red onion, green and red bell pepper. Peel and dice mango. Put in bowl. Add chopped garlic, extra virgin olive oil. Salt and pepper to taste - usually a good pinch of salt and a couple turns on a pepper mill or couple shakes of ground pepper.

Finally add 1/4 cup chopped cilantro and juice of 1 lime. Mix all together in bowl and set aside in refrigerator for at least 1 hour preferably 2 hours for flavors to marry before using.
