ARROZ FRITO GUATEMALTECO 
2 tbsp. shortening
2 c. rice
1 sm. onion, chopped
1 tomato, chopped
3 c. water
1 tsp. salt
1 garlic bud, whole
2 tbsp. English peas
2 tbsp. chopped green beans
1/2 carrot, finely chopped
1/4 bell pepper, chopped

Heat shortening; add rice and fry well until brown, stirring constantly. Add onion and tomato. Cook slightly. Add water, salt, garlic and other vegetables. Cover and bring quickly to a boil. Lower heat and cook 45 minutes or until done. Do not stir. When serving, remove with a fork. Serves 6-8.
