YOGURT MUFFINS | |
1 1/2 c. all-purpose flour 3/4 c. sugar 2 tsp. baking powder 1 tsp. baking soda 1/2 tsp. salt 2/3 c. plain non fat or low fat yogurt 2/3 c. skim milk 1/2 c. blueberries or grated apples (if desired) In large mixing bowl combine flour, sugar, baking powder, baking soda and salt. Gently stir in yogurt and milk, blending just until dry ingredients are moistened. Fill lightly greased or paper lined muffin cups 3/4 full. Bake at 400 degrees for 18 minutes or until well browned. Serve warm. Makes 12 muffins. LITE STREUSEL VARIATION: Combine 1/3 cup sugar and 1/2 teaspoon cinnamon. Fill muffin cups 1/2 full with batter; place 1 teaspoon of sugar-cinnamon mixture on top of each and add batter to fill cups 3/4 full. |
