CORN MEAL MUFFINS 
1 c. yellow corn meal
1 c. all-purpose flour
2 tsp. baking powder
1 tsp. baking soda
1 tsp. sugar
1/2 tsp. salt
1/4 c. egg substitute or 2 egg whites
1 1/4 c. plain nonfat yogurt
1/4 c. vegetable oil
vegetable cooking spray

Combine corn meal, flour, baking powder, soda, sugar and salt in extra-large bowl; make a well in the center of mixture. Combine egg substitute, yogurt and oil; add to dry ingredients, stirring just until moist. Spoon mixture into muffin pans coated with cooking spray, filling 3/4 full.

Bake at 425°F for 12 to 14 minutes or until golden brown. Remove muffins from pan immediately.

Yield: 1 1/2 dozen.
