CREAMY POTATO/SAUSAGE SOUP 
1/2 c. chopped onion
1/2 c. shredded carrot
1 tbsp. butter
2 c. sliced potatoes
1 1/2 c. chicken broth
1 c. milk
2 tbsp. flour
12-16 oz. sliced fully-cooked bratwurst or Kielbasa
1/2 c. frozen peas
Dash bottled hot pepper sauce

In 3 quart saucepan cook onion and carrot in butter until onion is tender. Add potatoes and broth. Bring to boiling; reduce heat. Cover and simmer 20 minutes or until potatoes are tender. Slightly mash potatoes with a fork. Stir milk into flour; add to potato mixture along with sausage, peas and hot pepper sauce. Cook and stir until hot and thick - DO NOT BOIL, the milk will curdle - it won't hurt taste, but texture suffers a lot. Makes 4 main-dish servings. Double the recipe because you'll want seconds.

Doubled it just like it said! "I wanted 3rds". 1 tbsp of sour cream with each bowl. Ill add a little more potato next time. Great recipe!

Delicious. Added a lot more Frank's Red Hot because we like our food spicy. This is my second time making it and I doubled the recipe. That's how much we like it!
