JAMBALAYA 
1 lb. med. size shrimp
2 lb. smoked sausage links (cut in 1/2" slices)
1 sliced lemon
2 tbsp. butter
2 (28 oz.) cans tomatoes
4 ribs celery, sliced
2 lg. bell peppers, sliced
2 lg. onions, sliced
2 cloves garlic, minced
4-5 tbsp. hot sauce
1/2 tsp. poultry seasoning
Salt & pepper to taste

Boil shrimp with lemon slices in enough water to cover for 5-7 minutes or until tender. Brown sausage in a skillet with butter; drain and set aside.

In large kettle mash tomatoes and add onions, celery, peppers, garlic, hot sauce and spices. Bring to a boil and reduce heat, simmer 30 minutes. Add shrimp and sausage and simmer another 30 minutes. Serve with hot cooked rice.
