APPLE MUFFINS 
1 c. flour
1/4 c. sugar
2 tsp. baking powder
1/4 tsp. salt
1 tsp. cinnamon
1/4 c. oil
1/4 c. milk
1 egg
1/2 tsp. vanilla
1 c. diced cooking apples

STREUSEL TOPPING:

2 tbsp. sugar
1 tbsp. flour
1/4 tsp. cinnamon
1/4 c. chopped nuts
1 tbsp. softened butter

Preheat oven to 375 degrees. Grease muffin pan. In large bowl, combine flour, sugar, baking powder, salt and cinnamon. In small bowl, mix oil, milk, egg and vanilla. Add to flour mixture, mixing well. Fold in diced apples, divide batter equally among the baking cups. Mix together all streusel topping ingredients. Sprinkle over the top of each cup. Bake 15 to 20 minutes. Cool about 10 minutes in pan before removing. Yield: 10 muffins.
