PEANUT BRITTLE 
4 c. sugar
2 c. light Karo
1 c. water
2 tsp. vanilla
4 c. red skin peanuts
1 tbsp. baking soda
2 tsp. butter
3/4 tsp. salt

Mix sugar, syrup and water and boil to 238 degrees. Add butter and peanuts and cook until syrup turns golden brown (290 degrees). Remove from heat and add vanilla and soda. Stir until mixture foams well. Pour quickly on greased tins and cool. Break into pieces. Makes a double batch.
