CHERRY SURPRISE MUFFINS 
Cream together:

1/2 c. brown sugar
1/4 c. granulated sugar
1 tsp. vanilla
1/2 c. softened butter
2 egg yolks, beaten (save whites)

Sift together:

1 c. cake flour
1/4 tsp. baking powder

Add to cream mixture above. Beat 2 egg whites and fold into cream mixture. Chop 1 cup of pecans. Sprinkle bottom of small muffin tins with chopped nuts. If using Teflon pan, spray lightly with Pam. Place 1 teaspoon of mixture on top of nuts. Press 1 cherry into mixture. Bake 10-12 minutes or until done at 350 degrees. Take muffins out of pan and sprinkle with powdered sugar.
