NO-BAKE BANANA PEANUT BUTTER
FUDGE BARS
 
1 ripe banana, peeled
2/3 c. butter
2 tsp. vanilla
2 1/2 c. rolled oats
1/2 c. brown sugar, packed
1 c. semi-sweet chocolate chips
1/2 c. peanut butter

1. Split banana lengthwise into quarters and then slice into small chunks, 1 1/4 cup about.

2. Melt butter in large skillet over medium heat. Stir in vanilla, then oats and brown sugar. Heat an stir five minutes. Set aside 3/4 cup oat mixture.

3. Press remaining oat mixture into a 9 inch square pan. Sprinkle bananas over crust.

4. Melt chocolate and peanut butter over low heat or microwave, uncovered 1 1/2 minutes on high. Pour and spread chocolate mixture over bananas. Sprinkle with reserved oat mixture. Press down lightly. Chill 2 hours.

Since microwave ovens vary in power, you may need to adjust your cooking time.
