POTATO PUFFS 
4 med. potatoes
1/2 c. boiling water
1/2 c. butter
1/2 c. flour
2 eggs
1 tsp. salt
1/4 tsp. pepper
Oil for frying

Peel and cut potatoes and cook in boiling salted water. In a saucepan, melt butter. Add water, salt and pepper, garlic salt or powder (opp). Add flour, stir until mixture leaves side of pan. Remove from heat. Add eggs. Drain potatoes add flour mixture and mash together. Drop by tablespoonful in hot oil, or deep fryer. Fry about 8 minutes. Drain on paper towels. Make about 20 puffs.
