ITALIAN POTATO PUFF 
1/2 c. chopped green pepper
1/2 c. chopped onion
3 tbsp. butter
4 c. mashed potato
2 tbsp. seasoned bread crumbs
8 oz. Mozzarella cheese

Saute peppers and onions in 2 tablespoons butter until soft. Stir in the potato. Grease a six cup baking dish evenly with the remaining butter. Sprinkle with bread crumbs, making sure the entire dish is covered. Layer potato and cheese in dish, beginning and ending with potato. Bake in a 350 degree oven for 30 minutes. Turn onto serving dish by shaking out of casserole gently.
