SHRIMP & ZUCCHINI 
3 tbsp. oil
1 lg. chopped onion
1 green pepper, chopped
2 c. cut-up tomatoes, fresh or canned
1 or 2 sm. sliced zucchini
1/2 tsp. salt & pepper
1/2 tsp. chili pepper

Heat pan. Add oil and cook onion and green pepper over medium heat, stirring occasionally for 3 minutes. Add tomatoes, zucchini, salt, pepper and chili powder. Simmer covered for 5 minutes.

Add shrimp and simmer another 5 minutes, until shrimp turn pink. Tasty served over rice. Serves 4 to 5.
