FUNNEL CAKE 
1 1/3 c. flour
1 1/4 tsp. salt
1/2 tsp. baking soda
2 tbsp. sugar
3/4 tbsp. baking powder
1 egg, beaten
2/3 c. milk (or more if batter is too thick)

Mix egg and milk together. Add dry ingredients. Beat until smooth. Place in funnel or small pitcher with spout. Let batter drop in a spiral motion into pan filled with 1 inch hot oil (375 degrees). Fry until golden brown, turning once. Remove from oil and drain on paper towel. Sprinkle with powdered sugar or cinnamon/sugar mixture. Serve hot.
