MICROWAVE EGGPLANT 
1 lg. eggplant
Salt and pepper to taste
3 tbsp. oil
1 handful grated Mozzarella (optional)
1/2 tsp. garlic powder
1/2 tsp. Italian seasoning
1 tbsp. Parmesan cheese

Cut eggplant into 1 inch chunks. Put eggplant in microwave dish and cook in microwave on high for 5 minutes. Remove and toss. Sprinkle remaining ingredients. Return to microwave on high for 5 minutes. Remove and let rest until ready to serve - about 5 minutes. (This could also be done with zucchini).

Since microwave ovens vary in power, you may need to adjust your cooking time.
