MICROWAVE EGGPLANT CASSEROLE 
1 lg. eggplant
Oregano
8 oz. grated Cheddar cheese
8 oz. sliced Mozzarella
5 oz. tomato sauce

Slice eggplant into 1/4 inch slices. Cover bottom of 8x9 inch microwave dish with 3 to 4 tablespoons tomato sauce. Add 1 layer eggplant and cover with tomato sauce. Add 1/4 of Cheddar cheese and sprinkle 1/4 teaspoon oregano over top. Repeat layers. Cover dish. Microwave on high 14 minutes. Uncover, add Mozzarella on top and cook 3 minutes.

Since microwave ovens vary in power, you may need to adjust your cooking time.
