BROCCOLI CHEESE CASSEROLE 
2 lg. bunches broccoli, with thickest part of stems removed
1/2 c. chopped onion
3 lg. eggs
1/2 c. sm. curd cottage cheese
2 c. grated Monterey Jack cheese
1/2 c. grated Cheddar cheese
1/2 c. half & half
1 tbsp. finely chopped parsley

Wash broccoli, cut into bite-size pieces and put in 2 quart casserole. Cover and microwave on high for 3-3 1/2 minutes, stirring after 2 minutes. Put onion in 1 cup glass measure. Microwave on high for 1 minute until softened.

Beat eggs in large bowl. Stir in cottage, Jack and Cheddar cheeses, half & half, onion and parsley. Add broccoli and stir to combine. Pour in 2 1/2 quart round casserole. Microwave on medium for 15-18 minutes, stir once, until broccoli is tender and cheeses are melted.

Since microwave ovens vary in power, you may need to adjust your cooking time.
