ITALIAN CHEESE CAKE 
3 lbs. Ricotta cheese
6 eggs
1 1/2 c. sugar
1 c. flour
1 tsp. vanilla

Grease large spring form pan. Preheat oven to 500 degrees. With electric mixer, beat Ricotta until smooth, about 1 to 2 minutes. Add sugar and eggs, beat another minute or two.

Add flour slowly, while continuing to beat. Add vanilla. Pour into spring form pan. Lower heat to 400 degrees. Place pan in bottom of oven and bake for 1 hour and 35 minutes.
