ITALIAN RICOTTA CHEESECAKE 
3 lbs. Riccota cheese
2 c. sugar
9 eggs
2 tsp. vanilla
1 tbsp. lemon juice
1 can (12 oz.) evaporated milk
8 heaping tbsp. flour

Mix all ingredients well. Spray 13 x 9 x 2 inch Pyrex dish with Pam. Pour mix into dish. Sprinkle with cinnamon. Bake for 1 hour or until toothpick comes out clean - at 300-350 degrees.
