APPLE WALNUT SUPREME CAKE 
4 c. coarsely chopped apples, peeled
1 3/4 c. sugar
2 eggs
1/2 c. Crisco oil
2 tsp. vanilla
2 c. sifted regular flour
2 tsp. baking soda
1 tsp. salt
2 tsp. cinnamon
1/2 c. chopped walnuts

Preheat oven to 350°F.

Combine peeled and chopped apples and sugar; set aside. In a large mixing bowl mix eggs, oil and vanilla; then beat 1 minute at medium speed.

Add combined dry ingredients alternately with apple mixture. Stir in walnuts.

Bake in a greased and floured 13 x 9 x 2 inch pan at 350°F for 40-50 minutes until bake tests done with toothpick. Do not under bake. Drizzle top of cool cake with lemon glaze.

Glaze: Blend 1 c. confectioners sugar, 1 1/2 Tbsp. lemon juice, 2 tsp. vanilla and 1 Tbsp. corn syrup until smooth.
