OAT BRAN BREAKFAST MUFFINS | |
Muffins store well in freezer. To reheat for breakfast, microwave one muffin on HIGH about 30 seconds. 2 cups oat bran cereal (I use Quaker) 1/4 cup brown sugar 2 tsp. baking powder 1/2 tsp. salt 1 cup skim milk (or whole) 2 egg whites 2 tbsp. unsweetened applesauce 1/4 cup honey (or molasses) Preheat oven to 425°F. Line 12 medium muffin cups with paper baking cups or spray bottoms only with non-stick cooking spray (Pam). Combine dry ingredients. Add combined milk, egg whites, applesauce and honey, mixing just until moistened. Fill prepared muffin cups almost full. Bake at 425°F for 15 to 17 minutes or until golden brown. Nutrition (1 muffin per serving): 120 calories; cholesterol 0 mg; fat 1g; sodium 90mg; calcium 80 mg; fiber 2g. Makes 12 muffins. Submitted by: Cynthia Gallagher |
