RED BEANS AND RICE WITH SMOKED
SAUSAGE
 
2 tbsp. oil
1 med. chopped onion
1 (4 oz.) can chopped green chilies
1 beef bouillon cube
1 c. water
1 can red kidney beans
1 lb. smoked sausage, cut up
1 tsp. Tabasco
3/4 c. rice, uncooked
1/2 c. shredded Monterey Jack cheese

Saute onion and chilies. Add water, bouillon cubes and rice. Simmer until rice is done. Stir in beans, cheese and sausage. Bake in greased casserole dish at 350 degrees until hot.
