RED BEANS AND RICE WITH SMOKED
SAUSAGE
 
2 tbsp. vegetable oil
1 med. onion, chopped
1 (4 oz.) can chopped green chilies, drained
3/4 c. rice, uncooked
1 c. water
1 beef flavored bouillon cube
1 (16 oz.) can red beans or kidney beans
1/2 c. shredded Monterey Jack cheese (2 oz.)
1 lb. smoked sausage
1 tsp. pepper sauce (Tabasco)

In medium saucepan, heat oil over medium high heat. Add onion and chilies and saute 3 minutes. Add rice, water, and bouillon cube. Bring to a boil. Reduce heat, simmer covered, 10 minutes until rice is tender. Stir in beans, cheese, smoked sausage, and Tabasco pepper sauce. Serve warm. Serves 4.

I get what you're going for, and I'm a fan of cheese, but this isn't really authentic. Just my two cents. :)
