RED BEANS & RICE & SMOKED
SAUSAGE
 
1 lb. smoked sausage, cut & browned
1 tsp. vegetable oil
1 med. chopped onion
1 can chopped green chilies
3/4 c. uncooked rice
1 c. water
1 beef flavored bouillon cube
1 can red kidney beans
1/2 c. shredded Monterey Jack cheese
Tabasco sauce to taste

Cut up and brown sausage. Heat oil in saucepan over medium heat. Add onion and chilies and saute 3 minutes. Add rice, water, bouillon cube and Tabasco sauce. Bring to a boil. Reduce heat to simmer. Cover and cook ten minutes or until rice is tender. Add in beans, cheese, and sausage until cheese melts. Serve warm.
