RED BEANS AND RICE WITH SMOKED
SAUSAGE
 
3 (16 oz.) cans red beans or kidney beans
1/4 c. chopped onions
1 clove garlic
1 bay leaf
2 strips bacon, cut into 1-inch pieces
2 tbsp. Worcestershire sauce
1/2 tsp. black pepper
1/2 tsp. salt
1/4 tsp. Tabasco
Pinch of ground thyme
1 lb. smoked sausage, cut into 1-inch diagonals
6 c. hot cooked rice (long or med. grain)

Place all ingredients except sausage and rice into a 2-quart saucepan. Bring to a boil; reduce heat and simmer, cover and cook 2 hours, stirring occasionally. Add sausage last 30 minutes of cooking time. Serve over rice. 1 cup of beans over 1 cup of rice. Serves 6.
