MRS. BERKEL'S CARROT CAKE | |
2 c. sugar 4 eggs 3 tsp. baking soda 1 tsp. salt 1 1/2 c. oil 2 c. flour 2 tsp. cinnamon 3 c. grated carrots 1 1/2 c. coconut 1 c. pecans ICING: 1 lb. powdered sugar 8 oz. cream cheese 1/2 stick butter 1 tsp. vanilla Cream sugar, eggs and oil. Add dry ingredients. Fold in carrots, nuts and coconut. Bake at 350 degrees about 1 hour in a 9x13 inch pan. Cream icing ingredients until smooth. Frost when cake is cool. |
