CALIFORNIA QUICHE 
3 or 4 eggs (usually 4)
1 lb. Italian sausage
9 oz. sharp Cheddar or Monterey Jack or combination of the 2, grated
1 3/4 c. milk
1/4 c. chopped chiles
2 Pet-Ritz pie crust shells, baked

Cook sausage, crumble. Heat milk. Mix all ingredients together. Pour into 2 pie shells. Bake 25 to 30 minutes at 400 degrees.
