MINTED CARROTS WITH LIME JUICE 
4 lg. carrots, shredded or grated
1/2 c. shredded fresh mint leaves
2-3 tsp. fresh lime juice
2 tsp. olive oil
Salt and pepper to taste

Combine all ingredients. Refrigerate for 30 to 60 minutes. Serves 4. 52 calories per serving.

Rich in beta carotene, this salad has a fresh, zippy taste.
