CHINESE FRIED RICE 
Fry 1/2 cup finely diced cooked ham, chicken or pork lightly in 2 tablespoons hot oil. Add 3 finely sliced fresh mushrooms, 1 quart cold cooked rice, 1 finely chopped green onion and 2 tablespoons soy sauce. Fry over low heat 10 minutes. Add 1 well beaten egg; cook and stir 5 minutes more. If color isn't dark enough, add a little more soy sauce. Makes 6-8 servings.
