CHINESE FRIED RICE 
Rice, uncooked (2 c. water to 1 c. rice)
1 onion, chopped
1 bell pepper, chopped
2 to 4 carrots, grated
Approximately 6 slices bacon, cooked crisp
Soy sauce (to taste)

Cook rice. Fry bacon crisp. Reserve bacon drippings. Add onion, bell pepper, carrots to drippings. Cook until onions are clear. Add rice, salt, and soy sauce. Mix to taste.
