CHINESE STYLE FRIED RICE 
1 1/3 c. Minute rice
1 c. water
1 egg, slightly beaten
3 tbsp. butter
1/3 c. chopped onion
1/3 c. water
2 to 3 tbsp. soy sauce

In a small saucepan, bring 1 cup water to a boil. Stir in Minute rice, remove from heat, cover and let stand 5 minutes. Meanwhile, using a 10 inch skillet, cook 1 slightly beaten egg in 3 tablespoons butter. Add 1/3 cup chopped onion and the rice. Saute, stirring over medium heat until mixture is lightly browned. Mix 1/3 cup water with 2 to 3 tablespoons soy sauce and stir into the rice. Makes 4 servings.
