TOMATO - CURRY SALAD 
3 med. tomatoes, sliced
1/3 c. plain low-fat yogurt
1 sm. onion, chopped
1/2 tsp. curry powder
Freshly ground black pepper, to taste
2 tbsp. chopped fresh parsley

Arrange tomato slices on 4 salad plates. Combine yogurt with onion, curry and pepper. Place dollop of yogurt mixture on tomato slices. Sprinkle parsley over top. Serves 4.
