BANANA CAKE 
1 1/2 c. sugar
1/2 c.butter
2 eggs
2 1/4 c. cake flour
1 c. mashed bananas
1/2 tsp. baking powder
3/4 tsp. baking soda
1/2 tsp. salt
1/4 c. sour milk
1 tsp. vanilla

Cream butter and add sugar gradually. Blend until very light and creamy. Beat eggs in 1 at a time. Prepare 1 cup bananas, mashed to which is added milk and vanilla. Add dry ingredients in 3 parts alternately with thirds of banana mixture. Beat the batter until smooth after each addition. Bake in two 9-inch layer pans in 350 degree oven for about 1/2 hour.

Prepare:

1/2 c. sugar
2 tbsp. flour
1 c. boiling water
1/3 c. butter or Crisco
3 to 5 ripe bananas, mashed or sliced
1/2 tsp. vanilla

Combine sugar and flour, add boiling water gradually. Cook, stirring constantly, until mixture thickens and comes to a boil. Add butter, bananas and vanilla. Let cool and stack layers.

MARSHMALLOW GLAZE:

1 tbsp. sugar
1 egg white, stiffly beaten
1 tbsp. marshmallow whip or 3 or 4 marshmallows, melted

Mix and top cake. Slip into hot oven to glaze. Can omit, if desired.
