CABBAGE CASSEROLE 
1 head cabbage, chopped, cooked & drained
1 recipe for white sauce (recipe follows)
1 1/2 c. mild Cheddar cheese, shredded
1 c. buttered Ritz cracker crumbs
1/2 c. Parmesan cheese

WHITE SAUCE:

1/2 c. butter
3 tbsp. flour
1 1/2 c. evaporated milk
1/2 tsp. salt
1/8 tsp. red pepper

Pour half of cooked cabbage in 2 quart casserole and cover with half of white sauce. Sprinkle with half of Cheddar cheese and half of Parmesan. Repeat these layers with other half of recipe. Bake at 350 degrees for 30 minutes.

WHITE SAUCE: Melt butter. Mix flour into milk, then slowly add to butter. Cook, stirring constantly until thickened. Remove from heat and add salt and red pepper.
