RICE PUDDING 
4 c. milk
1/3 c. sugar
1 pkg. vanilla pudding mix
1 egg, beaten
1 c. quick-cooking rice
1/2 c. raisins (optional)

Place all in a heavy saucepan. Bring to a boil over medium heat, stirring constantly or at least quite frequently. Let cook slowly for a few minutes. Remove from heat; add 1 teaspoon vanilla. Pour in dishes and let cool.
