RICE PUDDING 
2 c. cooked quick cooking rice
4 eggs
1 c. sugar
1 qt. half and half, heated
1 tsp. vanilla
Raisins, if desired

Cook rice according to box directions. Add eggs, sugar, milk and vanilla to the pan and cook until mixture just begins to boil. Pour into a buttered dish. Sprinkle top with cinnamon or nutmeg and serve.
