REGAL RICE PUDDING | |
3 1/2 c. milk or half & half 2 c. quick cooking rice 1/3 c. sugar 1/3 c. packed light brown sugar 2 tbsp. cornstarch 1/2 tsp. cinnamon 2 tbsp. butter 2 c. whipped topping 1/2 tsp. salt 2 tsp. vanilla 1/3 c. raisins Mix milk or half & half, rice, sugar, brown sugar, cornstarch, salt, and cinnamon in 2 quart glass bowl. Cook on full power 8 to 10 minutes or until mixture boils and thickens, stirring twice. Stir in butter and vanilla. Cool. Fold in whipped topping and raisins. Spoon into dishes for serving. Yields: 4-6 servings. |
