SWEDISH RICE PUDDING 
3/4 c. rice
3 c. scalded milk
1/2 c. sugar
2 eggs, slightly beaten
Pinch of salt
1 tbsp. butter, melted
3 cardamom seeds
Cinnamon for top

Cook rice in salted water; drain dry. Add milk, sugar, eggs, salt, crushed cardamom seeds and butter. Pour into casserole dish and sprinkle cinnamon over top. Bake at 400 degrees or until firm.

CUSTARD RICE PUDDING:

1 c. rice
5 eggs
1/2 c. sugar
1 tsp. vanilla
1 qt. rich milk

Boil rice in salted water 15 minutes. Drain. Beat eggs slightly. Add sugar, vanilla, and milk; add rice and place in casserole which is set in a pan of water at 375 degrees. Bake 45 minutes or until knife comes out clean. Serve with fruit.
