SWEDISH RICE PUDDING 
1 c. cooked white rice
5 eggs, beaten well
1/2 tsp. salt
4 c. scalded milk
2/3 c. sugar

Mix all ingredients together. Put into buttered casserole. Sprinkle with cinnamon and nutmeg. Bake uncovered at 1 1/2 hours at 350 degrees. Serve as side dish or dessert. Serve with raspberries or lingonberries.
