SWEDISH PINEAPPLE CAKE | |
There are no eggs or oil used in the cake. For fewer calories, use butter and lite cream cheese. Tastes wonderful and is so easy. CAKE: 2 cups sugar 1 (20 oz.) can crushed pineapple with juice 1 tsp. baking soda 1 tsp. vanilla 2 cups all-purpose flour 1/2 to 1 cup chopped nuts Mix in order by hand sugar, pineapple, baking soda, vanilla, flour and nuts. Pour into ungreased unfloured 13x9-inch cake pan. Bake 30 minutes at 350°F. Cool completely before frosting. FROSTING: 1 (8 oz.) cream cheese (softened) 1/2 cup (1 stick) butter, softened 3/4 cup sugar 1/2 to 1 cup chopped nuts Cream sugar and cream cheese; add butter and nuts. |
