BRUNCH AND BREAKFAST CASSEROLE 
2 (4 oz.) cans green chili peppers, diced
8 oz. shredded Cheddar cheese
2 c. milk
1 c. Bisquick
4 eggs, slightly beaten
1 c. cottage cheese
Salsa

Spray a 12 x 7 x 2 inch baking dish with non-stick spray. Sprinkle in chili peppers and Cheddar cheese. In a medium bowl, combine milk, Bisquick and eggs with a wire whisk until smooth. Stir in cottage cheese. Spoon egg mixture atop of chilies and Cheddar cheese. Bake 45 minutes at 350 degrees. Test with knife like custard. Check before 45 minutes. Let stand 10 minutes after cooking. Top with salsa if desired.
