EASY RICE PUDDING 
1 c. quick rice
2 1/2 c. milk
1/4 tsp. salt
1/4 tsp. cinnamon
1/2 c. sugar
1/4 c. raisins

Combine above ingredients in saucepan and stir constantly until mixture begins to boil. Reduce heat and boil slowly for 15 minutes. Stir occasionally. Pour hot mixture into 2 slightly beaten eggs and 1/2 teaspoon vanilla. Cool 10 minutes. Serve warm with whipped cream. Do NOT add the eggs to the hot mixture.
