BEEF CASSEROLE 
1 1/2 lb. ground beef
1 small can whole kernel corn, drained
1 can cream of chicken soup (do not dilute)
3/4 lb. Velveeta cheese
1 can Ro-Tel
1 c. Minute rice

Brown ground beef. Add Ro-Tel, soup, corn, Minute rice and Velveeta cheese. Let Velveeta cheese melt, stirring occasionally. Place in casserole dish. Sprinkle Cheddar cheese on top.

Bake at 350°F until cheese on top has melted.
