QUICK ESCALLOPED POTATOES 
2 tbsp. butter
2 tbsp. flour
3/4 tsp. salt
1 3/4 c. milk
5 c. sliced potatoes

Melt butter in pan. Blend in flour and salt. Add milk slowly, stirring constantly until sauce boils and thickens. Add potatoes and heat with occasionally stirring until sauce boils well. Pour into greased casserole; cover and bake at 350 degrees for 30 minutes.
