QUICK ESCALLOPED POTATOES 
2 tbsp. butter
2 tbsp. flour
3/4 tsp. salt
1 3/4 c. milk
5 c. sliced potatoes

Melt butter in sauce pan, stir in flour and salt, then add milk slowly, stirring constantly, until sauce boils and thickens. Add potatoes and heat with occasional stirring until the sauce boils again. Pour potatoes and sauce into a greased casserole, cover and bake in 350 degree oven for 30 minutes or until potatoes are tender. Serve hot. Serves 5.
